MLA Lamb burger Aussie style with pickled beets and a fried egg

8 ounces Australian lamb sirloin, ground
2 garlic cloves, minced
1 tablespoon coriander, ground
Salt and freshly ground black pepper, as needed
1 egg
Butter, as needed
2 pickled red beet slices
1 multi-grain Kaiser roll, 5-inch round
1 lettuce leaf
1 tomato slice
1 sweet onion slice
Steak fries, as needed
Malt vinegar, as needed


Combine lamb with garlic, coriander, salt and pepper. Form into a 5-inch patty and grill on a wood-fired barbecue to medium rare.

Pan-fry egg sunny-side up in butter. Toast Kaiser roll on grill.

To Serve: Put lettuce, tomato and onion on bottom half of roll. Lay burger on top and then beet slices and fried egg. Plate with top bun leaning against burger and serve with fries and malt vinegar.
