Aussie lamb burgers with whipped feta, marinated cucumbers, arugula, roasted red pepper paste


3 pounds ground Australian lamb
1/3 cup panko breadcrumbs
¼ cup milk
3 tablespoons chopped fresh cilantro
3 tablespoons chopped fresh parsley
1 tablespoon chopped fresh mint
3 tablespoons La Boite Kibbeh #15 spice blend (or another Moroccan spice blend)
3 tablespoons extra-virgin olive oil
Zest of 1 lemon
3 garlic cloves, minced
2 tablespoons grated parmesan
Salt and black pepper

Whipped Feta:
4 ounces crumbled feta
2 tablespoons plain Greek yogurt
2 tablespoons sour cream zest and Juice of 1 lemon
1 garlic clove, minced
1 tablespoon extra-virgin olive oil

Red Pepper Paste:
½ red pepper, roasted
5 garlic cloves, roasted
2 tablespoons sherry vinegar
½ cup tomato puree
¼ cup stale baguette crumbs, toasted
2/3 cup almonds, toasted
1 tablespoon chili powder
2 tablespoons extra-virgin olive oil
1 tablespoon paprika
1 tablespoon Rocoto Chile paste (or your favorite chili Paste)
Salt and black pepper

Marinated Cucumber:
½ English cucumber, thinly sliced
2 large dill pickles, thinly sliced
2 tablespoons chopped fresh dill
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh mint
2 tablespoons pickle brine
Juice and zest of 1 lemon 

8 whole wheat hamburger buns
2 cups arugula
¼ cup sliced red onion


In a large bowl, combine all of the burger ingredients together without over mixing.Let the mixture rest for at least 2 hours, refrigerated, before forming into 6-ounce patties. Cover and refrigerate.

In a food processor, blend all of the whipped Feta ingredients until a smooth paste is formed.

In a food processor, combine the red pepper paste ingredients with ¼ cup water and blend until combined. Taste and season as needed with salt and pepper.

In a medium bowl, combine the marinated cucumber ingredients and let them marinate for 5 minutes.

Preheat a grill. Season the lamb burger patties with salt and pepper. Grill them to the desired temperature. Let them rest 3 minutes before serving.

Butter and toast the buns.Spread the red pepper paste on the inside of the bottom buns and the whipped feta on the inside of the top buns. Place the burgers on the buns, top with marinated cucumbers, red onion, arugula, and finally the lids.
