MLA Flat iron steak with onion rings and russian slaw

Australian grass fed beef is delicious, especially in this recipe from MLA for Flat Iron Steak with Onion Rings and Russian Slaw.


To Prepare Steaks:
4 flat iron steaks, approx. 10 ounces each
Cook steaks over a grill until medium rare, and allow to rest.

Russian Slaw:
¼ head white cabbage
¼ head red cabbage
cumin seeds, toasted, lightly ground in mortar and pestle

Onion Rings:
4 cups flour
2 cups milk
2 eggs
salt and pepper
oil for frying


For the Russian Slaw: Using a mandolin, slice cabbage finely into a bowl. Add parsley and cumin. Add enough mayonnaise to allow the cabbage to release its water. Stir to combine.

For the Onion Rings: Sift flour into a bowl, then add milk and eggs. Whisk to combine. Cut onions into rings, dip in the batter and deep fry until crisp.

To Serve: Serve steak with a side of Russian slaw and top with onion rings.
