Braised Aussie beef with spaetzel noodles


Portion size: 8 oz
Alternate cuts: Aussie grassfed beef sirloin

4 pounds braised Aussie grassfed beef chunk roast
3 cups soy, anise and ginger braising liquid
2 cups crispy root vegetables
2 cups for service spaetzel noodles


For the beef: Pre-heat oven to 375 F. Sear beef in a hot braising pot. Remove and set aside. Deglaze pot with red wine and add beef back to pot. Cover ¾ of the way with braising liquid and cover and place in oven for 3-4 hours until fork tender.

For the vegetables: Cut vegetables into matchsticks. In a sauté pan with oil, quickly cook vegetables and set aside for service.

For noodles: Boil noodles in water and strain.

To plate: Place a bed of noodles on the bottom of the plate. Top with some of the vegetables and a generous portion of the beef.
