Australian Grassfed Beef Chopped Steakhouse Salad

Lightly seasoned, sous vide cooked Australian grassfed sirloin served chilled over a bed of chopped salad with garbanzo beans, giardinara, provolone, radicchio, tomato, lemon-oregano vinaigrette.

Ingredients

¼ Cup Lemon Vinaigrette, purchased

2 Teaspoons Honey

 

2 Sprigs Oregano, fresh

1 Pound Beef Sirloin, sous vide prepared & chilled

1 Pound Romaine, chopped

¼ Pound Radicchio, chopped

½ Pound Garbanzo beans, drained, rinsed

½ Pound Giardinara, drained, chopped

½ Pound Grape tomatoes, slivered

¼ Pound Provolone, shredded or chopped

Method

  1. Whisk honey, into vinaigrette.
  2. Toss lettuces, oregano and dressing gently until well mixed.
  3. Divide into 8 bowls evenly.
  4. Top with 1 ounce of garbanzo beans, giardinara, tomatoes, then 1 Tablespoon of shredded provolone.
  5. Layer 2-3 slices of the Australian grassfed sirloin over the top of the salad and serve immediately.
