We rounded up some of our favorite pasta dishes from our favorite chefs to feed your inspo. They’re also great ways to make the most out of underutilized cuts, so sorry, not sorry if they make you hungry! Torchietti Pasta with Aussie Lamb Sausage and Lemon Cream Sauce

Our mate and doyenne of Blonde on the Run Catering, Chef Renee Scharoff, brings us this sexy dish. Ground lamb gets seasoned with fennel, cumin and garlic and paired with an elementally simple lemon cream sauce. As tasty on the palate as it is pretty on the plate!

Curried Australian Beef Oxtails with Pappardelle

Vice President of Culinary at Marriott International and Aussie Beef Mate Stephen Toevs pulls from his world travels here, combining the heady aromatics of curry, cumin and coriander with the slow-cooked succulence of Aussie oxtails, wrapped in the embrace of wide-cut noodles. What better way to get value from a less-loved cut?

These next two are from renowned pasta ace and Aussie Beef Mate Chef Ryan Peters.

Fair play, it’s not technically a pasta, but close enough for Aussie rules – a caramelized onion risotto with Aussie Wagyu Flat Iron. The presentation alone is to die for, not to mention all those layers of richness, texture and deep umami. Yes, Chef!

Last, but certainly not least, this braised Aussie Lamb Shank over his handmade pappardelle is just a food hug to the Nth degree. Aussie wine, Calabrian chilies, a little technique, time and love are all you need to pull it together.
